Cooking method

  • I offer several fillings for pies, which are used by housewives in Bukovina villages. They usually bake twirls - yeast rolls that are spirally folded into round shapes and then baked in an oven. The diameter of such a twist is about 30 cm and the height is 10 centimeters and above, they are not stingy with filling. Traditionally served at weddings and funerals, but also very popular every day!
  • I do not indicate the number of ingredients, since everything is prepared on a whim.
  • 1 Poppy-nut: Boil poppy seeds and mince, coffee grinder, mortar. I add sugar to taste and excess liquid - milk, evaporate. Crush walnuts in a mortar or grind with a rocking chair. The ratio of nuts + poppy can be 50/50, 20/80, as you have the products. Pieces of nuts should be of different sizes, so it tastes better, so coffee grinders, meat grinders, specials. graters are not suitable for grinding nuts. The final touch is sour cream for the bunch (but don't thin the filling!)
  • 2 Poppy with raisins. We repeat all actions with poppy seeds + sugar + sour cream. Add swollen raisins to the poppy seeds. The ratio of raisins to poppy seeds is approximately 20 to 80.
  • 3 Nut filling. Grind the nuts in a mortar (pieces of different sizes), add sugar to taste and sour cream for a bunch.
  • 4 Halva. Plain sunflower halva is ground and laid out on the dough.
  • 5 Apple and chocolate. Three apples on a medium grater, squeeze the juice a little, add sugar, cocoa to taste. Done! If desired, add a little softened butter.

Note

So, the fillings:

Walnut-raisin. With this filling, they twirl in the photo.
I grind a large number of nuts with a rolling pin (delicious when large pieces), add soaked raisins (I had 3 tablespoons in the leftovers, but I realized that I "wanted" more). Sugar by eye, sour cream for gluing.

Curd and nut.
Cottage cheese is not wet, sugar, egg (or yolk), crushed nuts (the size of a pea). The ratio of cottage cheese-nuts is more likely 70 to 30.

Curd-raspberry.
My late aunt used to bake amazing bagels. There were a lot of raspberries in her garden, which it was not a pity to "poke" EVERYWHERE.
When mixing fillings, try not to damage the berries. The ratio is 70 to 30, 80 to 20.

There is also the village of Klishkovtsy in Bukovina, famous for its gardens.
Plums (variety - prunes) are cooked jam the thickness of the paste (so that the spoon stands). I love this jam, even just for bread and butter! They also bake vertices with him.
