Fidio with catfish

Ingredients

Fidio pasta 400 g
Catfish (fillet) 500 g
Cream 20% 400 ml
Parmesan 80 g
Garlic (to taste) 1-3 teeth
Salt pepper taste
Vegetable oil for frying
Dill for serving taste

Cooking method

  • Wash the fish, dry it, cut into 2x2cm pieces.
  • Heat vegetable oil in a frying pan, add fish and quickly fry over high heat for 2 minutes on each side, gently turning over to preserve the integrity of the fish.
  • Reduce fire. Pour cream in a thin stream, salt and pepper, squeeze out the garlic. Cook until the cream thickens. About 5-7 minutes.
  • Boil the paste in salted water until it becomes al dente.
  • Grate Parmesan on a coarse grater.
  • Wash the dill, dry it, chop finely.
  • Put the pasta on a plate, then fish with a creamy sauce. Sprinkle with cheese and herbs on top.
  • I didn't have Fidio, yyy .. just ended yesterday)) I broke spaghetti in half. And replaced the trout in the original recipe for catfish. Otherwise, it turned out to be real Italian pasta. Simple and indecent tasty !!!!))

Catfish is a sea fish. Length 40-70 cm, weight 2-3 kg, sometimes up to 13 kg. The body is elongated, flexible, laterally compressed in the posterior part, covered with very small scales immersed in the skin; the dorsal fin is long, from occiput to caudal fin, consists of spiny flexible and thickened rays, the head is round, with fangs protruding from the mouth (hence the name). A valuable fishing object. The meat is tender, tasty, boneless, contains about 18% protein and up to 5-6% fat, it can be boiled (in salted and slightly acidified with vinegar water), fried, pickled. Minced meat is prepared from large fish, and the waste is used for soup. Spotted and striped catfish are especially appreciated, mainly used for the preparation of balych products, smoking and salting.

I generally swore to buy frozen fish: it seems to be cheaper than chilled fish, and it is convenient to immediately throw it into the freezer until needed, but it turns out to be more expensive for myself: either it will remain after defrosting 100 g out of 500 g, like Ksyusha's, or a full g will turn out after defrosting, like Elena's.
Therefore, now I buy only fresh or chilled. Even if it is 2 times more expensive, it is still more profitable.
