I think the fat content is not the main thing ... perhaps the quality of the curd itself failed. I have 5% cottage cheese, I always take it from one manufacturer. And most importantly, get rid of the grains. Because they harden when heated. And I hold it in a water bath until it starts to melt ... about 5 minutes at a time, while I interfere all the time ... I just tried to heat it on the stove, there is enough for a couple of minutes, but I'm afraid that it will start to curl up, so now I only do it for bath ..
And to increase the fat content, you can add a couple of tablespoons of butter ...
