Lemon-coconut muffins

Ingredients

flour 250 g
baking powder 2 tsp
soda 1/2 tsp
nutmeg pinch
lemon zest 1 PC.
coconut flakes 40-50 gr
egg 1 PC.
vegetable oil 100 ml
sugar 160 g
buttermilk (kefir, whey) 350 ml
lemon juice 1 tbsp. l
For decoration:
powdered sugar 150 g
lemon juice 2 1/2 tbsp. l
coconut flakes for sprinkling

Cooking method

  • Preheat the oven to 180C. Prepare muffin molds, I use silicone ones.
  • Sift flour into a bowl and mix thoroughly with baking powder, soda, nutmeg, lemon zest and coconut.
  • Beat the egg, add sugar, vegetable oil, buttermilk (I used homemade yogurt), lemon juice, and mix well. Then mix gently with the flour mixture.
  • Place the dough into muffin tins. Bake in the middle of the oven for 20-25 minutes.
  • Leave the muffins in the tins for about 5 minutes. Do not rush to take out the cupcakes, they are very tender!
  • To decorate the muffins, mix the icing sugar thoroughly with the lemon juice. Brush the resulting icing onto warm muffins and sprinkle with coconut.
