It turns out bread, but as if during quick baking, the crumb is somehow finely porous. And the recipes for her are generally strange, everywhere the water is much less than the norm, even barely twists.

You can read about the formation of a kolobok on the forum. The dough should be soft to the touch, like an earlobe. It all happens with experience. If it is very liquid, then add a little flour, if the dough is steep, then a little water. Then the bread maker will do everything. The recipes from the instructions use durum wheat flour and type 550, I do not have such flour, if you are interested, I can reprint the recipe.
Baking rye bread does not require such a long proofing, I like to bake on program 4 schnell, in 2.10 hours a wonderful bread is ready. Rye flour requires a little more liquid, but I often bake 40% rye and 60% wheat flour.

Unfermented malt-15, dry sourdough-8 (poured flour on top). Water-260, warm. Taste, pores, holes are uniform, texture is not sticky, ALL SUPER, crust-2-medium. The hat rises, BUT ..... in the process it starts to fall. Bottom line: everything is fine except for the cap :(. Maybe I don't take into account the nuances? What would you advise? Regards.

Maybe it makes sense to try on another program? I don’t know how your model a 68415 has 2 programs for rye bread - program 2 lasts 3.30 and program 4 which I really like lasts 2.10. My verified formula is 3 glasses of flour to one glass of water and there I already look at the bun, I should smear a little with rye flour - this is normal then rye flour absorbs more liquid. You can try to do it with whey instead of water, it's also good. The forum has a nice section; Bread is the head of everything.
