Wine dough bread

Ingredients

Dough:
flour 150 g
semi-sweet white wine 100 ml
fresh yeast 1 g
Dough:
flour 200 g
water (33C) 180 ml
fresh yeast 5 g
salt 1 tsp
light molasses 1.5 h l

Cooking method

  • 1. For the dough, rub the yeast with your hands into the flour, pour in the wine and knead for 2-3 minutes. Then round off the resulting dough, leave for 1.5-2 hours at room temperature and then put in the refrigerator for 8-10 hours. The dough turns out to be dense and the resulting "bun" for the entire fermentation time only slightly increases in volume.
  • 2. For dough mix flour with salt, dissolve the remaining yeast and molasses in water. Remove the dough from the refrigerator, tear it into small pieces with your hands, add water and beat on medium speed until smooth. Then combine the resulting mixture with flour and knead at medium speed for 2-3 minutes and at high speed for another 4-5 minutes.
  • 3. Leave the resulting dough (it is quite liquid, it is not going into a bun) to rise for 1, 5 hours. During this time, fold it in an envelope twice - after 30 and 60 minutes.
  • 4. Put the finished dough on a cutting mat richly dusted with flour and form a loaf. Leave to proof for 30 minutes. Bake at 220C with steam for the first 5-7 minutes, then lower the temperature to 190-180C and bring the bread to readiness. Before baking, make cuts with culinary scissors to a depth of about 1.5-2 cm, hold the scissors at right angles to the workpiece.

Note

The bread is soft, with the thinnest crust and a wonderful aroma. The taste is absolutely neutral and goes well with any dish, it is perfectly cut and does not crumble at all.
