Winemaker's Bread

Ingredients

peeled rye flour 100 g
wheat flour, c / z 50 g
wheat flour 350 g
fresh yeast 10 g
dry red wine 200 ml
water 130-150 ml
salt 1.5 h l
honey 1 tbsp
olive oil 1 tbsp

Cooking method

  • 1. Mix wine with warm water and honey.
  • 2. Mix all kinds of flour and rub yeast into it with your hands. Add salt and liquid. Start kneading at minimum speed and knead for 2-3 minutes until smooth. Allow the dough to rest for 5 minutes, add butter and knead until a bun that slightly spreads over the bowl (about five minutes). Leave the dough to rise (until doubled). This takes about an hour and a half.
  • 3. Form the bread and let it stand for 45-60 minutes.
  • 4. Bake at 230 degrees for the first five minutes with steam, then lower the temperature to 180 and bring until tender. The total baking time is 45-50 minutes. Before baking, grease the bread with milk, a pinch of salt and sugar and make cuts.

The bread has a thin crispy crust, the crumb is airy. The bread has a delicate, slightly spicy taste that leaves a pleasant aftertaste, just like a glass of good wine. I made with different types of wine, and the bread is obtained with different flavors that convey the bouquet of wine with which the bread was baked.

It seems to me that this bread is greatly underestimated on the forum, perhaps because of the way it was baked. Not everyone wants or can afford to perform additional manipulations with a bread machine.
I prepared bread according to this recipe in a Panasonic 2501 bread maker, on program 01, simply putting the ingredients in sequence - dry, then liquid. It turned out amazingly - aromatic, soft and very tasty! The combination of wine and honey gives not only a scent, but also a surprisingly soft bread texture. I used ordinary dry yeast, a pack of 7 grams. Everything else is prescription. The bread rose high, baked even.
This bread also has an amazing color, the photo does not convey an unusual pinkish tint.
Now this wine recipe is one of the favorites in our family.
