Ingredients

First brew:

wheat flour 100 g
water 60 g
Second brew:
dry yeast (Saf-moment) 0.75 tsp
wheat flour 200 g
water 150 g
Dough:
first dough all
second brew all
wheat flour 150 g
whole grain wheat flour 50 g
water 80-110 g
salt 1.25 tsp
powdered milk 20 g
butter 25 g

Cooking method

  • First brew:
  • Mix yeast with flour, add cold water, knead the dough. Tighten the container with dough with a film, make 3-4 punctures in the film with a toothpick. Fermentation for 10-12 hours at a temperature of 27-30C degrees.
  • Second brew:
  • Mix flour with yeast, add water at room temperature, knead the dough (kneaded in a bread machine in the "pelmeni" mode for 4-5 minutes). Fermentation - 90 minutes at room temperature.
  • Dough:
  • Add two types of flour to the second dough, the first dough, salt, softened butter, powdered milk and water, it may need a little more or less depending on the moisture capacity of the flour and the time of year (in winter flour is drier and takes more water). The dough is very soft.
  • Baking program - Basic.
  • Put the finished bread on a wire rack and let it cool completely.
