Ingredients

Peeled pumpkin 700 gr.
Onion 2 pcs.
Celery 2 stems.
Olives 200 gr.
Capers 3 tbsp. l.
Balsamic vinegar 1/2 tbsp.
Sugar 1 tbsp. l.
Olive oil, I have vegetable 250 ml.
Tomato sauce 4 tbsp. l.

Cooking method

  • I congratulate everyone on the onset of the Nativity Fast. Here's a delicious lean recipe.
  • Peel the pumpkin, cut into cubes and fry in vegetable oil. Do not overcook, otherwise it will fall apart. Cut the celery and boil in salted water for 5 minutes.

  • Chop the onion and fry in oil. Add olives, capers, celery, tomato sauce, balsamic vinegar and sugar to the onion. Simmer over low heat for 5 minutes.

  • Add pumpkin, salt to taste.

  • Let the vegetables steep to create a flavor. The author recommends at least half a day, but we couldn't stand that much. It is also recommended to fill capers with hot water to make them slightly less salty. I had a jar of capers from which I drained and seasoned with olive oil, so they were moderately salty. I prepared half of the portion for trial. I didn't salt the dish, I took less oil, the taste is very interesting. Sweet pumpkin and salted capers with olives. You can put a little less olives. Tasty both hot and cold.
