Ingredients

Tomato 150-200 gr.
Bulb onions 1 onion
Cilantro + Parsley taste
Garlic 1-2 cloves
Rice 0.5 cups
Hmeli-suneli taste
Spicy pepper taste
Ground black pepper taste
Salt taste
Bay leaf taste

Cooking method

  • We cook SOUP-HARCHO, not HARCHO. That is why there are no walnuts in the recipe. The Internet is replete with recipes for kharcho soup with walnuts, but this is wrong. Especially inquired about this question from the chef in a restaurant in Kutaisi. Hops-suneli is added from the spices. But! Those hops-suneli that are sold with us, I see no reason to add, since there is little sense from them. Whoever has "real" hops-suneli - add to taste.

I gave the recipe for kharcho soup and potatoes are not added there. And there is also a recipe for simply Kharcho (and there are no potatoes here). There walnuts, tkemali, etc. A very thick brown dish turns out

Recently I cooked soup again, I remembered our dispute in this thread about kharcho / nekharcho, soup / nesup))), which, by the way, was completely removed, although it was quite informative.
I want to say that as much as I cook it (exactly in the form described here, only I didn’t put cilantro before, because I couldn’t stand it, but now I’m used to it) - I am so surprised at how simple but tasty combination of products. My favorite soup since childhood. I could eat it for breakfast, lunch and dinner.
