Ingredients

Garlic 5 teeth
Ground coriander 1 tbsp. l
Ground fenugreek (utskho suneli) 1 tsp
Imeretian saffron 1 tsp
Fresh coriander 1 bundle
Tomato paste 1.5 tbsp. l
Hot red pepper taste
Broth or water 2.5 liters
Onion 2 heads
Bay leaf 2 pcs.

Cooking method

  • Cook the beef on the bone, preferably the brisket. I don't cook lamb. It's a gallbladder bomb. When cooking, add 2 onions and a bay leaf. Remove the boiled meat from the broth and refrigerate in a sealed container. Then it will not darken. Strain the broth. Put rice in hot broth (2.5 liters) and cook until rice is done. When the rice is cooked, add spices, tomato paste, crushed garlic, salt, meat. and half the sliced ​​cilantro. Cook for another 10 minutes. Pour the rest of the cilantro into a plate before serving. I usually don't put meat. I'm putting it on pies. You can cook lean kharcho. Fry 2 finely chopped onions in sunflower oil. Pour 2.5 liters of boiling water into a saucepan and cook in the same way. The soup turns out to be very aromatic and satisfying.

Girls want to make a little addition. If after two hours of cooking the meat is tough, then the cow was born in the last century. Add 1 teaspoon sugar to the broth and cook for another 30 minutes. The meat will become soft, but the taste of the broth will not change
