Slovak beer bread

Ingredients

Poolish
wheat flour 100g
water 100g
fresh yeast 1g
Dough
wheat flour 900g
dark beer 520g
honey 30g
salt 20g
fresh yeast 12g

Cooking method

  • Poolish
  • Dissolve yeast in water, add flour. Stir until smooth. The dough thus turns out to be liquid. Close the container (or tighten with foil) and leave at room temperature for 12-16 hours.
  • Dough
  • Knead Pulish and the rest of the ingredients in a HP or a food processor for 20 minutes.
  • Then cover and leave to ripen for 2 hours.
  • After the time has elapsed, divide the dough into 8 pieces, 200 g each, roll them into a ball and put them in a baking sheet (28 cm in diameter). Sprinkle with flour on top.

  • Proofing takes about 1.5 hours.

  • Bake in an oven preheated to 250 C for the first 10 minutes with steam. Then release the steam, lower the temperature to 220C and bake for another 20-25 minutes.
