Dutch bread

Ingredients

Warm water 500 ml
Mimolet cheese or any other cheese 200 g
Salt 2 tsp
Wheat flour 500 g
Rye flour 150 g
Whole grain flour 50 g
Dry yeast 1 tsp
Poppy 40 g

Cooking method

  • Put all the ingredients in a container, observing the order recommended for the HP model. I've got yeast upstairs.
  • Dutch bread
  • Program No. 5 "French roll", weight 1000 g, light crust. He climbed well, despite the difficult composition.
  • Dutch bread
  • But, here, the photo on the cut did not work, sorry!

The dish is designed for

1000 g

Time for preparing:

3 hours 39 minutes

Note

Bread, of course, is not cheap. But, if you ever have a piece of cheese (by the way, I used Lambert), I recommend it! The crust is thin and crispy. The expressive taste of cheese and the crunch of steamed juicy poppy make bread an independent dish. With a cup of aromatic coffee or tea ...

Thank you Tatyana for your interest in the recipe! It is decorated with poppy along with cheese, I hope you like it! Bon Appetit!

Well, I baked it, Merri, Your bread. Thanks again . Tastes great. I reduced the bookmark, since I have a maximum of 900 grams, so I took everything with a coefficient of 0.6. But with the yeast I missed a little. I bake on pressed ones and took 6 grams of them. The bread rose almost to the very top, and there was still 1 hour 26 minutes left until the end of the process. So I wanted to interrupt the program and put on baking, but decided not to intervene for now. As a result, the roof of the bread fell off. This, of course, did not affect the taste of the bread, but I also want beauty. I will still be sure to bake, only I will reduce the yeast, and then try it with sourdough
Merri
Tatyana, thank you for not forgetting the recipe! It will turn out the way you want, show the photo!

Gorgeous bread! I did add a little sugar (my bread never comes out without sugar), but next time I'll try it without.
Especially delicious after the toaster!

Photo only from the phone, unfortunately

AstraCat, well done! Beautiful bread! Without sugar it will be even more magnificent.

This, apparently, will end quickly, so I will soon try without sugar)))
By the way, I took cheese in half with suluguni, the color and smell are awesome

Thank you very much for the recipe !!! Yesterday I baked this bread, the smell is awesome, but my husband said that the bread is rather bland, apparently there is not enough sweet for him. Can you please tell me if you add honey or brown sugar, the consistency will not change, otherwise I really liked this bread with its splendor?

Svetlana, I bake it strictly according to the recipe, so I cannot say that sugar will spoil the bread, but for my taste it is not needed there, it is better to put good cheese. If you want, try, but do not put more than 2 tbsp. l.

Light, many people like bread with added sugar. Although, if there is rye flour in the composition, then I never add.
Try 1 tbsp. l honey. I think my husband will like it.
Merri
Tatyana, thanks for the advice! It seems to me that the taste is balanced in the recipe.

For my taste, I would not add sugar either. So that's why they are felt-tip pens, to be different to taste.

Oh girls, thanks for the advice! I'll try with the 1st Art. l. honey, then unsubscribe how it happened

Hello! Tell me, do you need to grate the cheese? Large or small? And another question - to Panasonic how to calculate the number of ingredients?

I used suluguni cheese, it rubs poorly, cut into small squares, it's easier for me, everything mixed very well when kneading

Zolotce, I grated cheese on a coarse grater. What is the weight of the bread in your HP?
Zolotce
Bread Maker Panasonic SD-ZB2502.
Baking weight ~ 1000 gr, ~ 800 gr, ~ 600 gr.

Something I do not understand how to correctly recount the ingredients. For example, tell me how to calculate using at least one or two ingredients

As you can see from the recipe, the ingredients are calculated for 1000 gr. bread to get 800 gr. you need to multiply each product by 0.8, which would be 600g. by 0.6. Of course, clear numbers will not work, but you can always estimate by eye, for example, salt 2 tsp. for 800 g, bread is 1.6 tsp, i.e. 1 tsp. and + a little more than half a teaspoon, something like this
Merri
Thank you, Svetlana, for answering for me Zolotce! That's right!

Today I tried to bake with slight changes. I also have a maximum of 900g. I also added 2 tsp. Sahara. It turned out great. It was just necessary to "dispose" of the remnants of the cheese, there was mostly Poshekhonsky + a little sausage.
Great recipe, non-standard.
Merri
Aikimari, it's nice that you appreciated the Dutch bread. You can really use any cheese, and bread is delicious even without anything, just like that.

Help, the second time I bake this bread, Panasonic 2501 on the main program for 4 hours, the kolobok turned out to be excellent, I added cheese after the signal. The bread has a flat roof. What is the reason?

And what is the weight of the bread? Have you changed the recipe?

I counted for a smaller bun

Warm water 300 ml
Mimolet cheese or any other cheese 120 g
Salt 1.2 tsp
Wheat flour 300 g
Rye flour 90 g
Whole grain flour 30 g
Dry yeast 0.6 tsp

Wheat for the first time was used by the highest grade bakery (Gaspadar) for the second time the first grade, peeled rye, the bun turns out to be excellent, ordinary cheese is grated, I add after the signal. watched the dough half an hour before baking, it becomes small-hole, can the cheese dissolve and the dough becomes heavy? can the dough be overridden? 30 min - leveling T, 15-25 min kneading, then lifting (it interferes again during lifting), 50 min. bakery products. Twice the same result. The bread is very dense and tasteless. I do not know what to do.

Did you put the poppy in? It absorbs liquid, without it, an excess of liquid is obtained.
anfisa1
No, I don't like him. There was very little of it, and the dough was not smeared, there was an elastic bun up to cheese

Try leaving 1 tsp. yeast and add 1-2 tbsp. l. flour.

Thanks, I will try

Merri thank you very much for the recipe. The bread came out just unreal! I didn't add poppy either, because I only had it in the sweet mixture for the filling. I recalculated it with a coefficient of 0.8 per 800 grams. But the finished bread came out almost 1 kg. I took the cheese that was just the right one for the recipe - hard aromatic cheese, like gruer or good parmesan. The aroma is awesome. Thank you
