Aromatic beer bread with kefir sourdough

Ingredients

Peeled rye flour 150 g
White wheat flour 150 g
Whole grain flour 70 g
Spelled
(can be replaced with white flour)
70 g
Wheat bran 50 g
Kefir starter culture 550 ml
Light unfiltered beer 200 ml
Water 70 ml
Spice 1 tbsp. l.
Panifarin 3 tsp
Malt 1 tbsp. l.
Agram 2 tsp
Salt 1 3/4 tsp

Cooking method

  • Spices: 3 parts coriander, 2 parts mustard powder, 1 part cinnamon, 1/2 part cumin
  • Knead the ingredients for 10-15 minutes. in a bread maker.
  • Then place the dough in a large bowl covered with foil on the least cold shelf in the refrigerator for 24 hours.
  • Take out the dough, put it on the table, form a bun with circular movements of the palms, turning but not pressing from above.
  • Place in a baking dish lined with baking paper, greased with vegetable oil and sprinkled with bran, cover with a towel and leave for 5 hours. The dish should be slightly smaller than the baking dish.
  • Heat the oven with an empty baking dish covered with a lid. This can be a ceramic mold or pot, a cast iron or thick steel brazier, or a stone-coated pan. Temperature 250, 30 minutes preheat.
  • Cut a loaf, place on baking paper in a hot dish, cover with a hot lid, bake for 30 minutes
  • Then remove the lid, reduce the temperature to 230 and bake for 15 minutes.

Very tasty bread, there is only enough, the beer is light, the spices do not give a bright taste, but are barely readable, there is not much malt and agram. Balanced taste turned out

I'm a maniac specifically.
And I keep looking at the molds, because Sweet and Sour with Spices was baked in a stone-coated saucepan covered with the same deep frying pan - not that, it cooks faster outside and does not have time inside, I almost burned, I had to lower the temperature compared to the required one. Nobody answered me, apparently in Moscow they really don't sell ceramic molds with a domed lid. I tried to order through Amazon - they don't send such things here ... So far, I managed to buy 2 small forms for a mini-loaf. The only justification for me is that I have already adapted them like pots, simmering eggplants with lamb in the oven ...
And as new experiments on weekends ... now comes the dough that has stood for 2 days in a refrigerator and 18 hours in a room, without kneading ...
