I knead all the dough in it with a roller. the instructions say: for batter - a hook, for thick - a roller. but I mix everything with a roller, somehow I don't really care with a hook .. very dense dough (on chebureki dumplings, etc.) I mix in a food processor with knives, very quickly and zero fuss.

at first I learned to knead dough according to the article by Luda from Toronto, here on this one - 🔗

I did everything as Luda said, but such a beautiful ball did not work out for me.

The ball turned out for the first time, and since then it always turned out when I began to knead according to a certain pattern. I was so happy that I even made a video when the dough gathered in a ball for the first time

in all bread recipes that I bake from Ukrainian flour, I always add a pinch of ascorbic acid in powder (thanks to the generous soul of Lenochka-kolenko and God bless her!)

now the scheme I use to mesh. for the first time I got it in a ball on the recipe for Cuban bread, therefore I now apply this scheme to all breads. it looks like this:

Mix half the flour with sugar, salt and yeast (instant saf moment). Pour in hot water (49-52C) (all the water according to the recipe) and beat 3 minutes at medium speed.
Leave alone for 10 min, then add the rest of the flour and add fat, knead the dough, just into coarse lumps, only so that the flour is moistened with water (do not knead).
Leave the dough alone for 20 min.
Knead the dough until the gluten develops, for about 4-5 minutes at a slightly above average speed, and then as long as needed (usually 7-8-10 minutes, depending on the dough) at maximum.

for some reason, it grasps into a ball at the maximum. the dough is silky, shiny and smooth.to figure out what to add, I stop and feel it after this moment - 4-5 minutes at a speed above average, before I go to maximum.

even in the process, I change the position of the roller - at the beginning, when everything is just mixing into a heap, or just starting to mix, when gluten is not yet developed - the roller is 2.5-3 cm from the edge. and when the process itself is already underway - beating, or the development of gluten - then I release it to the very edge, so that the entire mass of dough is wiped through it against the walls of the bowl.

I usually bake small batches of bread, he kneads easily out of 200g of flour, despite the 7l bowl. it is important for me to be able to knead a little. I think that large batches of dough, as you write, from 1 kg of flour - can take longer than indicated in my layout for a loaf of Cuban ..

Haven't tried it yet, but the look of his bread looks like it works!

and, I also read in the book of recipes for him that they make mashed potatoes with a roller !!! I haven't tried it yet, again, but I want to! I can't stand crushing potatoes with a crush!

So today I have joy, and the husband has a feast tomorrow for breakfast (he is like on a diet and in the evening he will not try my goodies, although I licked a spatula after the souffle - - delicious !!!).

I was also pleasantly surprised by the design of the device. Everything is so simple and without any adapters and "extra" spare parts. Everything is done soundly and without any unnecessary "curlicues". In general, I'm happy! I'm very happy!
