Eggplant fried in cheese

Ingredients

Eggplant 700g
eggs 2 pcs
cheese (I have Russian) 200g
vegetable oil for frying
flour
salt
pepper

Cooking method

  • Cut the peeled eggplants into round pieces ~ 1 cm thick, season with salt and pepper. Grate the cheese on a medium grater. Beat the egg with a fork. Breaded eggplants in flour, dip in an egg and roll in cheese. Fry in vegetable oil on both sides until golden brown, the eggplants should become soft.

According to the recipe, the vegetable oil should be 0.5 cups. Then you need to put the eggplants on a napkin in order to drain the fat. I had about 2 tablespoons of vegetable oil in a large skillet, so there was nothing to drain.
