Pie "Lasunka"

Lasunka Pie

Ingredients

Dough:
flour 100 g
almond flakes 100 g
oat flakes 50 g
butter 150 g
Brown sugar 100 g
baking powder 1 tsp
Filling:
cottage cheese (pasty) 400 g
White chocolate 100 g
cream 33% fat 50 ml
eggs 2 pcs
dried pineapple 50 g
dried strawberries 50 g
rum 50 ml

Cooking method

  • 1. Finely chop the strawberries and pineapple slices and cover with rum for 10-15 minutes. Bring the cream to a boil, add chocolate to it and stir until smooth, cool to room temperature.
  • 2. Combine curd with chocolate melted in cream, add eggs and mix until smooth. Then add pieces of strawberry and pineapple (squeeze well beforehand).
  • 3. Combine flour, almond and oatmeal, and baking powder. Grate well cooled butter and mix with dry mixture until crumbs form. Then add sugar and stir again.
  • 4. Spread half of the resulting crumb over the bottom of the baking dish (I used a D 20cm form) and gently crush. Put the curd mixture and spread the remaining crumbs on top.
  • 5. Put in an oven preheated to 160C and bake until a dry skewer (in my oven it takes about forty minutes). Then turn off the oven and leave the pie in it for another 15-20 minutes.

! If you are going to double the portion, then the D 26 cm shape is fine. But the baking time will increase and you need to make sure that the bottom does not burn, and the top crust does not dry out.

Song*, I'm afraid that it cannot be removed from the multi. The bottom "cake" is very thin and fragile. I do it in a split form, lining the bottom with baking paper. Then I transfer it directly with the paper to the dish, and only then gently remove the paper.

you can also fresh strawberries and canned pineapple. Only it is good to let the pineapple drain and mix the pieces into the curd mass, and I would put pieces of fresh strawberries on top - it will fall under its own weight during baking. Just not a lot, so that the cake does not become wet inside and does not "drip", literally 5-6 medium berries.
