2. I reduced the amount of sugar by 150 g - and everything worked out (I took 50 g from applesauce and 100 g from syrup with pectin), it did not affect the relief

Natalya, thank you for the marshmallow. Instead of living apples, I already used preparations for the winter. I stewed apples with sugar in a cartoon without any additives. So for the marshmallow, the blank was very suitable. And I added 1/3 of the standard sugar to the puree.
The marshmallows themselves turned out to be clumsy (I chose the most decent ones for the photo), but nothing, we will train.
