Cooking method

  • In a cauldron or saucepan for growing. fry meat in oil (you can take pork and chicken, you can do one thing, as finances allow and what your desire is). The meat can be pre-boiled if you want to cook the lagman very quickly. When the meat is half done, add the chopped onions and diced carrots and fry a little too. If desired, you can add diced champignons. Add a little salt, ext. laurel. leaf and seasonings (we add ground pepper, fechel, basil, marjoram and whatever else you want). Then add some slicing. diced potatoes. Fry lightly, add water (and if the meat was boiled, then with that broth), bring to a boil and boil the potatoes until tender. Add tomato paste (to taste) and when everything suits your taste, add in the last place the pre-boiled homemade noodles (we use Mivina noodles in large packs), the consistency should be a thick soup.
  • Put garlic on the bottom of each plate (on a garlic press), pour in lagman, sprinkle with chopped herbs on top.

Nice, quick recipe! I also cook lagman, I tried it for the first time on Ai-Petri, it was extremely tasty! In winter, I do it with frozen tomatoes.

My husband's grandfather was Kyrgyz and so they taught me how to cook lagman. We love this tasty and rather simple dish, literally last week I did it for the last time. In general, lagman is made on lamb or beef, but for the lack of it I did it for the last time and it still turns out delicious on pork, according to the rules, homemade noodles go, but I usually use spaghetti.

Pour oil into the iron pot, heat it, then there the meat, fry it over high heat until all the meat turns white and then add in turn all the ingredients that I wrote above, but at the same time we reduce the fire (the onions are overcooked, then the carrots, and so on turn, add pepper, radish, green beans, mushrooms, pickled cucumber and spices to the iron pot) put tomato paste. We close the cast iron with a lid, make a small fire and let it go out. And at the end, add boiling water to the consistency of soup, let it boil and at the very end put vinegar, garlic, herbs.

And I boil the spaghetti separately in salted water until tender. And then I put spaghetti on the bottom of a deep plate and fill it with yummy from a cast iron))
