Ingredients

Pike (fresh or frozen) 3 kg (approx)
Eggs 3 pcs
Semolina 200 g
Large onion 1 PC
Vegetable oil 150 g
Lemon 2 pcs
Seasoning "For fish"
Spices (salt, black pepper)
For decoration: lettuce, lemon, cranberry

Cooking method

  • Clean the pike, gut it, carefully remove the skin, starting from the middle, cutting the spine, and turning it first to the tail, then to the head (this way the skin will remain with the head). Detach all bones. Pike fillet, chop the onion in a meat grinder, add eggs, semolina, 120 g of vegetable oil, salt and pepper - to taste. Knead very thoroughly, fill the head and skin of the pike with minced meat, sew the incision. Grease the pike with vegetable oil, sprinkle with the "For Fish" seasoning, put in a roasting sleeve, put lemon slices, tie the sleeve according to the instructions, pierce the sleeve several times with a needle, put it on a baking sheet and put in an oven preheated to 200 degrees. Bake for 1.5 - 2 hours (20 minutes before the end, cut the sleeve and let it brown). Put the chilled pike on a platter with lettuce leaves, garnish with lemon slices and cranberries.
