Stuffed carp in spicy jelly


carp 2-2.5 kg
onion (large) 2 pcs
carrot 2 pcs
apple (large) 1 PC
lemon 0.5 pcs

mixture of four peppers (peas) 1 tsp
cubeb pepper 3-4 pcs
parsley, thyme 3-4 branches
ground paprika 1 tsp
White wine 200 ml
freshly ground black pepper taste.

gelatin 15 g
egg 1 PC

Cooking method

  • 1. Gut the carp, cut off the head (remove the gills) and tail and cook the broth with carrots, one onion and spices, except for ground black pepper. Fifteen minutes before the end of cooking, add herbs and salt. Strain the finished broth and set aside for a while.
  • 2. Cut the carp into portions 2-3 cm thick. Cut fillets from each piece - first cut along the bone, and then along the skin. Such "pockets" will turn out.

  • 3. Prepare minced meat from the fillet cut in this way, add a piece of buns soaked in milk, season with salt and pepper. Then fry the onion and apple in a pan (cut into very, very small cubes) and paprika and add to the minced meat. Add egg and stir until smooth. Fill the fish pieces with minced meat.

  • 4. Boil water and half the wine, add half a lemon, squeeze the juice out of it and lightly salt. Transfer the pieces of fish very carefully, let them boil. Then reduce heat to low and simmer the fish for 15-20 minutes. Place the finished fish in the mold.

  • 5. Pour the remaining wine over the gelatin and let it swell. Combine with cooked fish broth (650-700 ml), heat it up without boiling and pour over the fish. Leave to set.


It turns out a very delicate and fragrant fish.
