Spicy beans Princess on beans

Ingredients

Beans 250g
Tomatoes 5 pieces
Eggplant 2 pcs
Carrot 3 pcs
Bell peppers 2 pcs
Spicy pepper 1 pod
Garlic 7 teeth
Salt 3 tsp
Vinegar 9% 2 tbsp. l.
Onion 1 head
Tomato paste 2 tbsp. l.
Granulated sugar 2 tbsp. l.
Vegetable oil for roasting

Cooking method

  • Cook the beans until tender.
  • Cut the eggplants into cubes, salt and leave for 10 minutes.
  • Dice the bell peppers and onions too.
  • Scald the tomatoes, peel and mash in a blender.
  • Grate carrots on a coarse grater.
  • Chop the garlic and hot pepper in a blender.
  • Fry eggplants, onions, carrots and bell peppers in vegetable oil until golden brown.
  • Add tomato puree and chopped garlic and hot pepper.
  • Put tomato paste, salt, sugar and vinegar there.
  • Add beans to the vegetable mass, mix and simmer for 40 minutes, stirring occasionally.
  • Sprinkle with chopped herbs before serving.
