Ingredients

chicken breast (peel off) 1 PC. (350 g)
chicken bouillon 1 liter
butter 2 tbsp. l.
bulb 1 pc (70 g)
carrot 1 pc (60 g)
celery stalk 1 PC
potatoes 3 pcs (300g)
zucchini 1 pc (400 g)
Cheddar cheese or Maasdam (grate) 110 g
cream 10% 1 glass

Cooking method

  • The delicate velvety taste of the soup is delicately set off by a cheese note ... I recommend it to everyone!)
  • I decided to weigh all the products (the weight of the vegetables is already given in a peeled form), to eliminate possible mistakes, I was afraid to cook too liquid soup, but everything turned out fine ...
  • Put the broth to cook, pour a little more than 1 liter of water (for 100-150 ml). Melt butter in a thick-walled saucepan. Peel all vegetables, cut into medium cubes and put in a saucepan. Fry the vegetables, stirring occasionally, until soft. Pour in hot broth, let it boil, reduce heat and simmer until the vegetables are completely boiled (about half an hour). Add the boiled breast, cut into pieces. Then use a blender (submersible) to grind the soup in mashed potatoes, add warmed (not hot) cream and grated cheese. Heat the soup over low heat (do not let it boil - curd) until the cheese is completely melted. Serve the soup hot, preferably with croutons or garlic croutons.

Until this moment, I have very rarely cooked mashed soups, now I will correct this mistake, because it is not just tasty, but not to convey in words how tasty) - sorry for the praises.

Sanya, in mashed soups (at least for me), another big plus is the ability to introduce vegetables and other "usefulness" into the family's diet, which they don't want to eat in their natural form.

Sasha, for my family everything that is not spicy and where there is no pepper is dietary ... And if you count by calories, then of course there are enough of them ... But I think that cheese and cream can be safely reduced ... without harm for the taste.

Today I boiled cauliflower and it was a pity to throw away the broth. I looked through the bookmarks and found there such valuable "deposits" of mashed soups. I added other vegetables to the broth (except zucchini) and milk instead of cream. So tasty - I would have eaten for a century !!!
Now I will cook often. And the next in line is pumpkin puree Gashi soup.
