Ingredients

Young squash without seeds 200g.
Liquid kefir 200g.
Wheat flour (I have 1c) 500g.
Dry yeast 3d.
Salt 8d.
Sugar 15g.
Hard cheese 50g.

Cooking method

  • Grate the zucchini on a coarse grater with the peel. Add salt, sugar, stir and leave for 10-15
  • minutes before the juice is released.
  • Add kefir, grated cheese, flour mixed with yeast. Knead in a combine according to the scheme:
  • 1 speed - 2 minutes
  • 2nd speed - 5 minutes
  • The dough is sticky, does not hold its shape:

  • Pour 2 tablespoons into a large bowl. l. vegetable oil. Lay out the dough. Also lubricate hands with oil. Shape the dough into a ball, cover with foil and leave for 15 minutes.

  • Leave in a warm place for 1 hour. I defrosted in the switched off microwave with a mug of boiling water.
  • 30 minutes before baking, preheat the oven to 250C together with a cast-iron pan with a lid (this is ideal). If there is no saucepan, then together with a baking sheet or baking stone.
  • Carefully put the blank by the edges of the paper in a saucepan, cover with a lid.
  • Bake for 10 minutes at 250C, then remove the lid, reduce the oven temperature to 220C for another 10 minutes, then reduce the temperature to 200C and bake until tender.
  • My pan is low and wide, so I baked without a lid in the same way:

1. Bake on a preheated baking sheet.
2. Bake all the same in a saucepan. Even if the workpiece is somehow unsuccessfully laid down during transfer, the bread will puff up during baking and this unevenness will be smoothed out.

(only I had a problem, apparently connected with yeast - I didn't want bread to rise for 3 grams, well, I just added another 5 grams and then the process started)
