Zucchini salad

Ingredients

young zucchini 3 Kg
medium carrots 5 pieces.
Bulgarian pepper 3 pcs.
garlic 1 head
Bay leaf 3 pcs.
black peppercorns 20 pcs.
salt 60 g
sugar 60 g
vinegar 9% 250 ml
sunflower oil 250 ml

Cooking method

  • They praised me this salad very much, I decided to share it.
  • Prepared for the first time from 2 kg of zucchini. I tried it while cooking - I liked it.
  • Grated the carrots with strips for Korean carrots and put them on the bottom of the pan, because they are harder than zucchini and take longer to cook.
  • Zucchini should be cut into short cubes across the zucchini, I used a special grater. Blocks 10 mm thick. Place the zucchini on top of the carrots, add salt and sugar, and stir the zucchini to let the juice flow.
  • Cut the pepper into strips, put in a saucepan.
  • Then add oil and vinegar and cook for 30 minutes. I did not mix the bottom layer with carrots for about 15 minutes, so that they cook at the bottom. Stir gently so that the vegetables do not lose their shape.
  • Towards the end of cooking, add squeezed garlic. I also added a bunch of cilantro.
  • In the meantime, wash the jars well with baking soda and sterilize. Boil the lids.
  • Put boiling in sterilized jars and close immediately.
  • Wrap in a blanket until it cools completely.
  • I got 5 cans of 0.5 liters per 2 kg of zucchini.

Note

It will turn out beautifully with red pepper, but I did not want to use the imported one.

Marina, tasty, zucchini soft, but a little crispy. It is important that the zucchini are young with underdeveloped seeds. You don't need to clean them to keep their shape.
I cooked it pretty quickly, it all took me about 1 hour.

My advice is not to reduce the vinegar. You have tasted a freshly prepared salad, and when you open it in winter, you will not feel this vinegar, it will be absorbed into the vegetables and partially its taste is evened out.

And yet, zucchini are quite sweet vegetables, when they are canned, there is always a lot of vinegar in the recipe.
