Ingredients

fresh cabbage 0.5KG
chicken fillet 1 half
White bread 2 slices
FILLING 1
Mayonnaise 2 tbsp. l
FILLING 2
olive (sunflower) oil 2 tbsp. l.
mustard 1 tsp
apple cider vinegar 1 tsp
salt, sugar taste
grated hard cheese 50 g

Cooking method

  • Boil the fillet or cook in the microwave (5 minutes). Cut the bread into small cubes (no more than 5-7 mm) and dry in the oven or microwave. Grind the meat in the same way as croutons.
  • Chop the cabbage not very thinly, mix with the meat and season. Here I have two options, either just mayonnaise or a little whipped butter + mustard + vinegar + 0.5 tsp. salt + 0.5 tsp. Sahara. With mayonnaise the taste is more neutral, with the second dressing it is more aromatic. Before serving, mix with croutons and sprinkle with cheese. If the dish is placed on a festive table, then sprinkle with crackers on top and the next layer is cheese.
  • The salad turns out to be very light. I tried it in a cafe and really liked it. Now I often cook myself.

Young cabbage is so tender, where else to press it. But the winter is better cut into smaller pieces. I like it when the cabbage crunches in my mouth. And extra juice is not particularly needed.

The dressing, as I said, should be thin and, preferably, with a hint of mustard. So diluted mayonnaise is fine too
