Roll Spikelet with apricot-apple filling

Ingredients

Dough:
flour 100 g
water (4C) 100 ml
fresh yeast 3 g
Dough:
flour 250 g
powdered milk 15 g
eggs 1 PC
sugar 40 g
butter 100 g
light molasses 5 g
fresh yeast 15 g
vanilla sugar 1 p
zest of half a lemon
salt 5 g
Filling:
dried apricots 200 g
dried apples 200 g
rum 30-50 ml

Cooking method

  • 1. Pour boiling water over the apples and dried apricots, let them soften and squeeze well. Tamp the fruit tightly into a glass jar and pour over the rum. Leave it overnight. In the morning (before the final kneading of the dough), puree with a blender.
  • 2. For the dough, dissolve the yeast in water chilled in the refrigerator and stir with flour. Put in the refrigerator overnight.
  • 3. For the test, grind the yeast with sugar and leave for 10 minutes. Add lightly beaten egg, molasses, vanilla and grind again. Mix flour with zest and salt, combine with yeast mixture and dough. Knead at medium speed for 5 minutes, add softened butter (NOT MELTED, but with a plastic consistency) and knead for another 5-7 minutes until a soft, elastic bun is formed.
  • 4. Let the dough sit for 5-10 minutes, roll it out 0.5 cm thick, distribute the filling and form 2 rolls. Make notches on the sides with scissors and set for lifting 2 times. It takes me about 2 hours. Bake at 180 degrees for 20-25 minutes. Brush with egg before baking.

Note

For this recipe, I use Uzbek dried apricots, and apples are regular dried ones. If the dried fruit is sour, add a little sugar to the filling. It turns out to be tender and juicy, but not wet. The dough is not troublesome, well suited and baked, easy to mold.
The rolls are tender and very fragrant.
