Khomentashen or Aman's ears

Ingredients

Flour 4 glasses
milk 2 glasses
butter 100g
eggs 4 things
sugar 150g
honey 1 tbsp. l.
dry yeast 7 g
salt 1 tsp
poppy 1 glass
walnuts 4 tbsp. l.
raisins b / c 1 glass
vanilla sugar 10g
rast. oil 2 tbsp. l.

Cooking method

  • 1. Melt the butter. Sift flour.
  • 2. Dilute yeast in 100ml of warm milk, add 1 tbsp. l. sugar, 1 tbsp. l. flour, knead the dough and put in a warm place for 30 minutes.
  • 3. Grind the nuts in a blender or crush them in a mortar.
  • 4. Scald the poppy seeds with boiling water, put it on a sieve and let the water drain. Then pass through a meat grinder 2 times.
  • 5. Rinse the raisins and pour boiling water over for 5 minutes. Drain and dry.
  • 6. Poppy seeds, nuts, raisins, sugar, honey and 1 egg, mix well. The mass should be thick. Cover the filling and refrigerate.
  • 7. When the dough has doubled, add 2 eggs, milk, remaining flour, salt, vanilla sugar and knead the dough. At the end add melted sl. butter and knead the dough again. Remove in warmth.
  • 8. When the dough has doubled, put it on the table sprinkled with flour and, as needed, adding flour, knead the dough for 10 minutes.
  • 9. The dough should be soft and elastic and not sticky to your hands.
  • 10. Preheat the oven to 180 gr.
  • 11. Divide the dough into pieces. And roll each into a layer 2-3 mm thick. Cut circles out of the dough, take out the filling and spread it out in 1 tsp. in the middle of each circle.
  • 12. Blind triangular patties.
  • 13. Place the pies on a greased baking sheet, brush with whipped yolk and leave to proof for 15 minutes.
  • 14. Bake in a preheated oven until golden brown.
