Girls, I have this ciabatta recipe. Once I found it on some website. True, I'm only the second day on this forum (maybe you already know this recipe), but I really like it.
For 2 small ciabatta.

For dough:
135g flour
1/8 tsp dry yeast
2 tbsp. l. warm water
80 ml water

For the test:
270g flour
1/2 tsp dry yeast
160 ml water at room temperature
2 tbsp. l. warm milk
1 tbsp. l. olive oil
1.5 tsp. salt

Preparation:
1. Dough: stir yeast in warm water and let stand for 5 minutes. Put flour in a bowl, add yeast mixture, water, mix well until smooth. Cover the bowl with plastic wrap and leave at room temperature for 12 hours. (it is possible for a longer time)

2. Dough: stir yeast in warm milk and let stand for 5 minutes. Put flour in a bowl, add dough, water, olive oil, yeast mixture. In the original recipe, knead the dough in a food processor at low speed for 3 minutes, and then add salt for another 4 minutes. But I mixed everything with my hands .... Transfer the finished dough to a bowl greased with olive. butter, cover with foil and leave for 1.5 hours (the volume should double).

If you have a Teflon baking sheet, simply dust it with flour, or if you have a regular one, cut a rectangle out of parchment the size of your baking sheet. Grease your hands with butter and divide the dough into 2 parts. Put each piece of dough on a baking sheet in the form of a rectangle. Cover the dough with a damp kitchen towel (but you should not cover directly on the dough, but put low glasses on a baking sheet and a towel on top of them). leave the dough to rise for another 1.5-2 hours.

Preheat the oven to 220C. Sprinkle the dough with flour and bake for 20-25 minutes.
