Rainbow salad


Yellow pepper 2 pcs.
Green pepper 2 pcs.
Red pepper 2 pcs.
Medium carrots 2 pcs.
Green onions
Lemon juice (vinegar) 1 tbsp. l.
Honey (sugar) 1 tsp
Salt taste
Vegetable oil 2 tbsp. l.
Garlic 1-2 cloves

Cooking method

  • Wash the carrots and boil the unpeeled until half cooked.
  • Wash the pepper, cut it in half, remove the seeds, cut into small elongated pieces. Place in a bowl.
  • Pour a spoonful of vinegar or a spoonful of lemon juice over the pepper, stir and leave for 15 minutes.
  • Peel the boiled carrots, washing under cold water.
  • Cut it into cubes (preferably like a Korean carrot). Stir in pickled peppers.

  • Cook separately marinade.
  • Melt a teaspoon of honey.
  • Add 2 tablespoons of vegetable oil and salt to the honey to taste.
  • Mix thoroughly, pour into a bowl of peppers.

  • If served immediately, chop the green onion and stir.
  • Also, to taste, you can add one or two cloves of garlic, chopped only into cloves. If you crush it, it will kill the taste of the pepper.
  • It is advisable to chop green onions on the day of serving.
  • It's better and more useful this way.
  • Required condition: vinegar to vegetable oil ratio 1 to 2 .
  • Don't overdo it with vinegar. Lemon gives an unusual taste, replacing vinegar.
  • It prepares very quickly. The taste of the salad depends on the slicing - you can chop smaller, but not larger.

  • The secret of this salad :
  • It has two completely different flavors.
  • If you eat it right away, you can feel the taste of fresh peppers in the marinade.
  • Pretty tasty. But if you leave it at least overnight, the taste changes completely - the vegetables are pickled and acquire the taste of pickled peppers.
  • The salad can be prepared for future use and stored in the refrigerator. It is stored up to 4 -5 days. The most interesting thing is that the longer it is stored, the tastier it is.

  • You can also replace carrots with sauerkraut or fresh cabbage, but cut in the same way as peppers. Or add cabbage to the salad. But there should be 2 times more peppers.

  • Replaces any pickles on the festive table. Delicious with meat disheswhich are cooked on the grill, as well as with bean dishes.

  • I served this salad with a kebab... A very good combination.
