Ingredients

dough:
kefir 500 ml
dry yeast 7 gr.
sugar 1 tbsp. l.
salt 1 tsp
an egg 2
olive oil 3 tbsp. l.
flour 700-800 gr.
onion filling:
green onions / finely chopped / 200 gr.
boiled egg 4
thick yogurt / sour cream / * 100 g
salt. pepper
vegetable oil for frying
* yogurt can be successfully replaced with pre-strained curdled milk. * when adding yogurt, the filling becomes both softer and juicier.
Spinach filling:
spinach / coarsely / 1 kg
white part of lettuce / cut into rings / 1-2 stems
good homemade cottage cheese 200 gr.
thick yogurt / sour cream / * 100 g
dill 2 tbsp. l.
salt. pepper
olive oil 2 tbsp. l.

Cooking method

  • dough:
  • warm kefir / I slightly warmed it up /. ol. oil. eggs. salt. Combine sugar and yeast and stir well. add flour and knead soft dough.
  • make a ball out of dough. brush it lightly with butter and place in a bowl. cover with another bowl of larger diameter.
  • it turns out like a greenhouse for the test.
  • put in a warm place. after 30 min. the dough is ready.
  • divide the dough into portions and spread out on the table / greased rats. fill with butter. pinch and roll thinly giving the shape of "bast shoes" ./ tell the truth. the dough is so soft and just breathing in the hands. I "rolled" with my hands! /
  • fry in well-heated oil.
  • put on a paper towel. to remove excess fat.
  • 40 pies are obtained. if you have a small family. make a dough with half the ingredients.

  • spinach filling:
  • Place spinach and lettuce in a saucepan with a non-stick bottom. simmer until the liquid completely evaporates. then add ol. butter and simmer for another 3-4 minutes. cool.
  • add cottage cheese. salt. pepper and yogurt. dill. mix well.

  • stuffing with onions:
  • coarsely grate boiled eggs / chop /. combine with cottage cheese. dill. onions. salt and pepper. add yogurt and stir.
