If you are not too smart, then you can replace from 20 to 50% of wheat flour with rice in any recipe for ordinary noodles that is convenient for you.
But you can also do it entirely on rice flour:
500 g rice flour
3 eggs,
a pinch of salt

Knead the dough very thoroughly, let it rest for 20 minutes under a towel, then roll it out in a very thin layer so that it is almost transparent. Leave the rolled dough on the table to dry for 20-30 minutes, then cut the noodles.

I somehow accidentally found one cake after a month and a half, dried up, of course, but there was no mold or any spoilage, they soaked it and ate it. I usually bake a lot of small ones for gifts to friends, but I put this one in the corner and forgot.
There are a lot of spices, saffron, cinnamon, nutmeg in Easter cakes and all these are excellent antiseptics.
