Soup with white beans and cheese

Ingredients

Take ... for 2 servings
Vegetable or chicken broth about 500 ml
Onion - finely chop 1 \ 2 pcs.
Small young carrots on a grater 1 \ 2 pcs.
Cut fresh tomato into cubes 1 small
Finely chop the garlic 0.5-1 cloves
Boiled white beans 1/2 cup
or as needed by density
Orange peel 1 whole slice
Parmesan cheese
or other hard cheese with a crust
50 g
Beet greens or fresh spinach 6 stems with leaves
Fresh chopped parsley 1 tbsp. l.
Salt, spices, lavrushka taste
Oil for frying onions 1 tbsp. l.

Cooking method

  • - Heat the oil in a saucepan, and fry onions, carrots, garlic on it.
  • - Add broth, tomato, orange peel, whole piece of cheese and cook for 10 minutes in time so that the cheese melts (but does not boil!)
  • - Add finely chopped stalks of beet tops, boiled beans - still cook over low heat until the tops are ready.
  • - Add chopped leaves of tops, parsley and cook until tender for 5-7 minutes.

  • Pour the soup into bowls.
  • I cut the cheese into pieces and put it on a plate in the soup.

Note

The recipe for this soup seemed interesting to me, I made it and share my impressions.
Impressions: pleasant bean soup, I really liked the taste of boiled cheese.
Beet tops in the soup is not for everybody, I am not very good, and I did not feel the taste and smell of orange peel either

I include such a soup in my menu, but without the beet tops. And I'll definitely add smoked cheese
It is recommended to serve this soup with white bread toasts, pour a little olive oil on top!
