Ingredients

4-5 cereal or oat flakes (long) 1 glass
Rye flakes 1/2 cup
Old kefir 2 glasses
Total mixture of flakes on kefir 250 g
Wheat flour 230 g
Rye flour 160 g
Potato broth 170 ml
Salt 1.5 tsp
Sugar 1 tbsp. l.
Vegetable oil 1 tbsp. l.
Dry yeast 1.5 tsp.

Cooking method

  • Pour the flakes with old kefir and leave to swell overnight.
  • The dough was kneaded in cotton, the bun was very soft. I had to add 5 tbsp. l broth, the presence of rye flour affected.
  • Proof the dough in the oven at 30 * until the dough doubles.
  • Baking at 180 *, with a gradual decrease in temperature to 160 *.
  • With such a dough on a mixture of flakes on kefir, you need to work carefully, since the dough rises well and quickly, you need constant control.
  • There are also lumpy tears on my bread, this dough has stopped a little. Even 10 minutes while the oven warmed up makes a difference.

I add the broth to get a soft dough, which means that the correct flour / liquid ratio did not work out right away, and the dough required more liquid to get a soft bun.
