Rye bread with oatmeal (without ferments and malt) in a bread maker

Ingredients

Dry yeast 2 tsp
Wheat flour 225-230 g.
Rye flour 210-215 g.
Oat flakes 4 tbsp. l.
Powdered milk 2 tbsp. l.
Butter 10 g
Salt 1.5 tsp
Sugar 1.5 tbsp. l.
Water 310 BC

Cooking method

  • I fall asleep in the breadmaker in the same order as the list of ingredients is written so that the water does not combine with the yeast. I put on the mode for rye bread (I have it 07), baked for 3 hours 30 minutes, after baking I wrap it in a towel until it cools completely.
  • It was the first rye bread that everyone liked, the recipe was born by accident, I made bread with bran from a book, but ... at the moment when I wanted to make it again, I forgot the book at work, I had to remember it from memory, because I remembered with the recipe changes and the result was awesome, I decided to share it here, because many say that rye should be made with sourdough: (this doesn't suit me, I don't like difficulties.
  • This is the first rye bread in which the kneading knife is not left inside. Now we only bake it. Sometimes I add 1-2 tbsp to all the ingredients. l. peeled seeds without increasing the amount of water.

The dish is designed for

how the average turns out, did not weigh

Time for preparing:

3 hours 30 minutes

Thanks for the recipe!
I only did the laying of the products in accordance with the instructions for my HP, that is, I swapped the water and yeast.

Yes, I have not bought bread for 5 years, if I have to eat purchased bread in the company, then here I feel the difference. And how do you think, from what it is ... And HP was also presented, I did not choose. But I'm quite happy with it.

Yes!!! They also gave me a cartoon! The main thing is to bring to the right thought those who want to make gifts, and even so that they do not realize that they have been given ...

And for some reason the top of my loaf sagged? I weighed all the ingredients and put them in the HP according to the recipe.
Can I reduce the liquid?
But the bread tastes good, sour.
nikul
It's strange, I never had any problems, I can really try less water, I realized from the posts of other participants that up to about 280 g you can remove the liquid. Write when you do, ok? Is it wet inside, or is there simply no beauty? And I still can't get bread on fast modes, haven't you done it on fast modes?

I didn’t give any idea, but they gave me a cartoon too, but I’m not friends with her yet, I’m just trying to make friends (to be honest, I don’t understand at all why it was necessary to spend money on her, but since my beloved gave me a gift, I’ll have to make friends )

Inside, it is well baked, holes, baked in the usual mode. The top has failed, at the stage when the baking mode was turned on.I think this is due to the large amount of liquid.
Tomorrow I'll bake it with less water, I'll sign off how it happened.

Stadler Form Bread Maker.
I reduced the water to 310, put vegetable oil instead of butter. now baked. I'll let you know what happens.

The bread is baked, everything is fine. After reducing the liquid in my bread maker, I get what I need. I didn't have time to take a photo, the homemade bread at dawn cut the bread and cut half of it!
Thanks for the recipe!

I also want to thank you for the recipe. Made it with second-grade flour and five tablespoons of cereal ... Great taste. Thank you. Pets appreciated.

Sorry for not answering right away, probably the highest, I just take the best by weight (in packs it is much more expensive)

Please And I'm still making it with "bran oatmeal" It just seems to me that when there is too much oatmeal, the taste of oatmeal appears, I don't really like it, and I also bought five types of cereals in one box, I have not tried it yet

There is no taste of oatmeal yet. Possibly depends on the grinding of the flakes. I have a rough 15-20 minute boil. I want to note that both the color and the shape are ideal (I am not able to upload photos yet). Moreover, I did not interfere with the process at all. I put the ingredients together and left. Great. And with the bran it is probably delicious.

The fact is that everywhere I was looking for exactly the kind of oatmeal that you use, but ... I found only five minutes, the rest are generally instant. Therefore, maybe my flakes taste a little different. I, too, do not interfere in the process, it seems to me that without my participation the magic stove can cope on its own. I just didn't find the bran anywhere, but I found it in the cereal, now I'm doing it with them

Thanks for the recipe - I'll definitely try. I have hb for 3 years already, but because of difficulties with malt and sourdough, I never baked rye. I tried it once from the ready-made mixture - it turned out not bad, but still not my own))) I would like to clarify - should rye flour be sieved? the recipe indicates water 310 g. I think that all the same ml. I clarify because I had hb bork (barely got rid of it) - and so there in the recipes the water was in grams.

In practice, the ratio of water in milliliters and in grams is used as 1x1, if there is a small difference, the flour / liquid balance will be adjusted.
Any flour must be sieved in order to saturate the flour with air and remove various byaki, including broken glass and so on ...

I think in milliliters, I have a measuring cup for the bread maker, here it is 310. And when I take it by weight, I try to sift rye flour, but not through a sieve, since it has a larger grind than wheat, I have a special mug, there the holes are larger, but I think that you can not sift. Then write, did you like it?

Thanks for the link, I read it, I always sift it myself, but not before every preparation, but sifted everything right away and that's it, then I just use it.

And yesterday I baked this bread in mineral water (there was nowhere to go, but it’s a pity to pour it out). It turned out to be even tastier, softer or something? In general, I liked it even more!
nikul
Super, (y) gotta try. And once I ran out of powdered milk and I added milk instead of water - the difference was not noticeable, but this can also mean
KatRin
I put this bread down. I took 250 water and 60 milk. I have Rye mode 4 hours

Write how? Liked?

Thanks for the recipe! The bread is delicious, but very dense. I'll find time and put a photo
nikul
: victory: glad I liked it, I realized that all gray and black breads are dense, not airy, unfortunately

Girls, can you see the cereal? or do they dissolve?

No, not visible. And I had - a long cooking.

Thank you, Galyun, how is it tastier?
gala10
Quote: mowgli
and how tastier?
I do not know. I don't have quick-cooking flakes.
