Do you bake with sourdough? If not, then the bread will crumble ... To be honest, I have already forgotten what bread is with yeast ... I bake with sourdough. Perhaps you are making a tougher dough, shifting flour. Have you read about His Majesty Kolobok? What recipes do you bake? Many things can affect the crumb of bread. If you allow me advice, then read more theory here on the Bread Maker, ask what is not clear in those sections devoted to Kolobok ...
