Handsome men!
Alexandra, what are you serving the loaves in?

Yuliki

Unfortunately, I have not mastered the art of proofing in molds followed by tipping. The last rush was this week, when flipping the wet fluffy handsome man blown away and baked a half-bake.
Therefore, I distribute it on baking paper in bowls or bowls, the size of the form with a lid, in which I then bake. Transfer to hot pan directly on baking paper. I cut the top too.
Here she defrosted in white ikeevsky soup bowls-kosushki.
He baked on paper in those very ceramic pots. Removed the paper before photographing

I read in the comments to Lyudmila's posts, someone stood in a colander, and did so. Then I found straw baskets I bought at home a hundred years ago, I lined a towel in them, I sprinkle flour on them (again, I read somewhere). I put the paper on the board, for lack of a baking shovel, press it against the basket, and overturn it. And on paper, in the oven.
But I have not yet tossed it into a mold, the more heated, it will probably be more difficult!

Eh ... this is not a sight for the faint of heart, when, in front of your eyes, a handsome man loses shape, she herself underwent shock therapy today while proving the same whole grain, but according to the original recipe. And what is he missing? It seems that she did everything according to the rules ... She covered the basket on top with a baking spade with baking paper, carefully tipped the contents of the basket onto it ... and he immediately began to deflate. When transferring bread on parchment paper, the result is more stable, but I will not give up. Painfully, the top-crust comes out beautifully when proofed in a basket. We will learn to turn it over correctly.I think that the result is worth our efforts))

Zest,

I have no particularly beautiful proofing forms, there are no real ones at all, they don't seem to be sold here, only a colander and a willow basket. And I only bake once a week on weekends. And mostly lengthy recipes. As soon as I think that a few days erased from life for the sake of this overturning - no, until I'm ready to continue experiments. I transfer everything on paper. And if in ceramics - all the same, you just put it cold in the oven - you can put it in paper right in it

the fact of the matter is that I got the most real proofing baskets, my bread from one of them is in the photo, now I won't rest until the right bread starts to turn out)) This one still turned out delicious and was appreciated by my family - they did not see the sad picture of blowing and took the average height of the bread for granted
And in what you are right - on long-term recipes of such feints I will not repeat yet, it is a great pity for the expended efforts. For training, I planned Simple with sourdough.
Alexandra
Zest ,

About simple they write that it does not always work out as it should ... I did the replacement of most of the flour with wallpaper and the leaven was whole, so I did not feel ...
Zest
My Simple has long become an everyday recipe when you need to bake something quickly. There have never been any punctures. That is why I chose for "coups"))
I still can’t understand why many do not succeed in it ... There seems to be no pitfalls and difficulties ...
Alexandra
In this case, of course

It's a pity, but I haven't found these banneton baskets anywhere on sale.

I didn't find them either. I bought it in Germany.
kinski
Alexandra, do you mean proving baskets?
Alexandra
kinski ,

Yes, it is them
kinski
I saw on one site, but I don't know if they are sold at retail ((if you suddenly contact and find out what they are selling .. take a share))) (unless, of course, there will be big money))))
I'll look for a link now
