I used 100% sourdough, that is, the content of flour and water in it are equal by weight.
I used whole grain flour, in this case more water should be added, 1/4 cup. If you use completely white flour, add only 1 tbsp of water. l. Accordingly, if the mixture is, you can calculate the amount of water yourself.

Recipe for 2 thin pizzas:
1 1/2 cups flour (225 g white or 200 g whole flour + 1 tablespoon panifarin)
1 1/2 cups whole grain or other 100% sourdough (360g whole grain)
from 1 st. l. up to 1/4 cup water depending on the type of flour
2 tbsp. l. olive oil
3/4 tsp salt

Place ingredients other than oil in a cotton bag. Knead the dough for 3-4 minutes, add butter and knead for another 6 minutes. Remove the spatula and leave the tetso with the "Dough" program on for 1 hour 30 minutes (until the end of the program). The dough should double. If the dough has not grown enough, leave until doubling.

Roll out 2 large thin pizza cakes on baking paper with a rolling pin greased with olive oil. Leave on for 30 minutes.

Simultaneously heat the oven to maxmum. If available, use a pizza stone. If not, heat the grate.

For lovers of thin crispy pizza: Lightly grease the tortilla with olive oil, prick in many places with a fork and bake for 3 minutes. on each side at 240C.
Then take out, grease with pizza sauce, sprinkle with cheese, add ingredients and bake for 5 minutes.

For lovers of thin, soft pizza with a crispy bottom crust:
Brush lightly with olive oil, apply a thin layer of pizza sauce, spread the mozzarella or cheese, spread the ingredients (DO NOT HAVE A LOT OF THEM, OTHERWISE THE PIZZA WILL NOT BAKE) and bake at 240C for 8 minutes.

Alas ... not one of the two pizzas was saved for photographing ... I can only say that one was baked according to the first method, the other according to the second.
