Ingredients

chamomile tea*** 240 gram

nuts (pistachios and walnuts) 59 gram
chamomile tea 2 sachets
dry yeast 1 gram
salt 9 grams

Cooking method

  • From one bag of chamomile brewing tea, let cool.
  • Sourdough we feed the day before 8-10 hours before kneading.
  • Mix yeast with flour.
  • We knead chamomile tea, sourdough, flour with yeast. 5 minutes after the start of kneading, add salt and dry chamomile from the second bag. We continue kneading. The dough is not sticky, but soft. The total mixing time is 10 minutes.
  • Add the nuts (chopped the walnuts coarsely, did not chop the pistachios). Knead in at low speed.

  • Round the dough and let it ferment for 90 minutes. In the middle of fermentation, stretch-fold once.

I mixed two types of nuts (the author had one) and added cherries and cranberries (the author had cherries). I decided to add yeast. I don't like sourness in bread. And it took me more water (the author recommends 207-220 grams).
