Girls, I want to share my version of tiramisu. I make a cream from medium-consistency homemade cottage cheese, always without grains. I beat 400 g of cottage cheese and 3-4 homemade yolks in a chopper bowl, it was included in the blender set, very convenient for whipping cottage cheese, I don't throw all the cottage cheese into the bowl at once, I do it in two passes to beat it better. Then I separately beat 0.5 liters of homemade cream with a mixer, add sugar and beat again, the main thing is not to interrupt. I mix cottage cheese with cream with a mixer at low speed. The cream is ready, very tasty.
Such a biscuit is very suitable for this cream: 2 eggs, 3 tbsp. l. sugar, beat with a mixer, add 3 tbsp. l. condensed milk, 3 tbsp. l. thick (or whatever) sour cream, vanillin, beat a little more, 0.5 tsp. extinguish soda with vinegar, 1 tbsp. flour or a little more, so that the dough is like sour cream of average density. I pour the dough onto a large deco, bake a biscuit, then soak it, pouring coffee and cognac from a teapot, this is my personal know-how))) and cut the biscuit into strips according to the size of trays.
