Mars Taste Cake

Ingredients

Cake:
Wheat flour 1 tbsp.
(160 g)
Eggs 2 pcs.
Condensed milk 1 can
Slaked soda 1 tsp
Cocoa 2 tbsp. l.
Caramel cream:
Sugar 300 g
Eggs 4 things.
Flour 2 tbsp. l.
Oil 280 g
Nougat cream:
Milk 400 ml
Nougat 150 g
Granulated sugar 5 tbsp. l.
Gelatin 15 g
Cream 450 ml
Interlayer:
Peanut
Coating:
Ganache

Cooking method

  • Cake:
  • Beat the eggs, combine with condensed milk + flour + cocoa + soda. We mix everything in the oven. Bake at 180⁰ for about 40 minutes.
  • ("Chocolate on boiling water" and "Chocolate from Nesmeyana" are also suitable)
  • Caramel cream:
  • Melt 150 g of sugar in a frying pan with constant stirring (caramelize). Then pour water at room temperature in a thin stream (do not be scared if the caramel gets into a lump !!: o))) We continue to stir and you will be happy! : o)) Boil until all the sugar is dissolved.
  • Beat eggs with the remaining 150 g of sugar, add flour and stir to avoid lumps. Add the egg mixture to the sugar solution and boil until the mixture thickens. Add softened butter to the still warm mass and beat well.
  • Nougat cream:
  • Boil milk. Stir nougat, sugar, dissolve in milk. Refrigerate. Soak gelatin in water and dissolve over low heat. Add to cream.
  • Put the mass in the refrigerator. Whip the cream. When the nougat mass begins to solidify, mix it with the cream from bottom to top.
  • Assembling the cake:
  • We cut the cake into two parts. We spread the caramel cream, sprinkle with peanuts. Since I had a semi-liquid cream with nougat, and the cake was rectangular, I made sides from the scraps, simply gluing them with caramel cream, then carefully laid out the Cream with nougat, covered with the second half of the cake and sent it to the refrigerator until morning. In the morning, carefully detach the sides with a knife and coat with ganache. Then you can decorate as your heart desires! :about)))

The story is this ..
The customer calls and asks for a cake in the shape of a Mars bar and really, really wants the cake to be as close as possible to the taste of the bar.
I had to tinker and assemble something similar from different recipes. Unfortunately, you cannot recreate the chemical taste with natural products, but what happened was very tasty! :about)))

Nougat:
If necessary or desired, nougat can be prepared by yourself:
Peeled walnuts (almonds or peanuts can be used) crush in a mortar to make small pieces.
Beat the egg whites until firm.
Mix honey with sugar and cook, stirring occasionally, until the syrup is browned and "strings" are formed (you need to drop a few drops from a spoon into cold water: if "strings" are formed in the water, then the syrup is ready). After that, remove the syrup from the heat and pour it into the protein foam in a thin stream, without stopping to beat. Then add chopped nuts and mix well.
Put the waffle plate on a plate or tray, apply a warm nut mass on it in an even layer (1 cm thick), cover with a second waffle and leave for several days in a warm room to dry the nougat (it does not harden completely)
