Nothing wrong. Somewhere I found a hole in the filling. During the proofing, I never flowed, but during baking it happened: somewhere a crack will appear and the syrup will drip. Then caramel freezes on a baking sheet.

Pinch better next time. Especially overlap the ends inward, as I described. Pinch the bottom seam as well and never coat the edge with anything, otherwise it does not stick to the dough.
