good evening! so my first questions went ... 3 day I bake wheat-rye bread, and all that is not like ... for the first time the roof fell, but then it was the fault of the water instead of 305 ml 350 poured ... but the second time I poured it as it should, but the roof fell even more, it even went inside a lot ... now it’s the third time, but I already see that it didn’t rise as it did the first time and today I added flour myself during the second batch. Can you please tell the bun should stick to your hands? the composition is as follows: 300-wheat, 100-rye ... and is there still a difference in wheat of the highest grade and in the 1st grade? I used 1 grade today ...

and
The bread rises, but falls inward. Causes.

The type of flour matters. Even one and the same flour in different conditions (hot, cold, humid, etc.) will require a different amount of water.

Good evening.
Please tell me, people are experienced.
I have an X-500 bork. While I am mastering simple wheat bread.
No matter how many recipes I try, the bread never rises to a full bucket.
Now I baked for this:
500 grams of flour
1.5 tsp. salt
1.5 tbsp. l. Sahara
1.5 tbsp. l. rast. oils
300 ml water
1 tsp dry yeast Saf-moment.

The recipe is taken from the site, only for Panasonic.
Mode 1-main, medium crust, weight 900.
So, the dough rises only to the level - there is not enough 4-5 cm to the edge of the bucket.
It seems to taste normal, but I want it to be more airy.

Why does the dough at the maximum weight for this HP not fill the bucket completely?

good evening Ulyana_123 ... I have a recipe from Panasonic (according to a company book) for 500 g 330 ml of water and 1.5 tsp of yeast

I bake this recipe often, the bread is high enough (above the bucket)
Omela
Yes, for 500 g -1 h. l. there is little yeast.

Thank you! I will try to bake next time with amendments.

not a lot of live yeast, milk 400ml, salt 1h. l., sugar 1 tsp., vegetable oil 2 tbsp. l., flour 700g, measured out with measuring spoons and a glass that came with the kit, baked for 3 hours on the main mode

What model do you have ??? For the 500th, the maximum bread weight is 900g, you have a lot of flour, and, as I understand it, little yeast. They (the yeast) just couldn't handle the rise.

And how much flour is in your measuring cup. what did you think?
olesia
Bork 500 brand, but the maximum weight is 900 g, I did everything according to the recipe book, yesterday I used dry yeast, strictly not a millimeter away from the recipe, it did not work either, yesterday I did not take a picture, it does not even fill half of the bucket!
olesia

And how much flour is in your measuring cup. what did you think?
on a glass of division, where 200 I decided that this is 200g

Well, here's your mistake ... You need to weigh flour! In a 250 ml glass, for example, there is only 160 grams of flour .. Therefore, we purchase scales .. They are even now inexpensive.

Thank you, does that mean you still have to buy the scales ???

If the recipe is in grams, then it is better to buy a scale. In general, a scale in the kitchen is a very useful thing. Not just for baking. For any baked goods, for canning, in order to check how much of a product is available.
olesia
thanks ... I'm going to get the scales the other day ...

The recipe book is not correct.

And how much flour is in your measuring cup.
About 130-140 grams of flour. And yes, it is better to buy electronic scales with a step of 1 g.
olesia
thanks ... I'm going to get the scales ...
Omela
Good luck!
olesia
Thank you
