Carrot pie with coconut flakes and condensed milk "Orange mood"

Ingredients

Puff pastry
(yeast or yeast-free)
(I have purchased,
already rolled out in the shape of a circle)
250 g
Eggs 4 things.
Yolk 4 things.
Carrots (peeled) 1 kg
Condensed milk 1 can
Zest of one orange
Coconut flakes 75 g
Powdered sugar for dusting

Cooking method

  • Boil the carrots in a pressure cooker until they are quite soft. You can do it in a regular saucepan, it just takes longer. Drain the water well.
  • Put baking paper in the form, then the dough so that high sides are obtained.
  • Grind boiled carrots in a food processor. Add condensed milk to it and beat a little more. Add eggs, yolks and chopped orange zest. Beat again.
  • Stir in coconut flakes here.
  • Pour the filling into the prepared form with the dough.
  • Preheat the oven to 240 gr. When you put the dish with the dough into it, you need to lower the temperature to 190 grams.
  • Allow to cool in the mold. Remove and sprinkle with icing sugar on the already cooled cake.

Bake for about 35-45 minutes

Cooking program:

I baked with convection at 180 gr. until "dry stick" and until the surface of the cake is browned.

I love desserts, cakes and everything sweet, in which condensed milk is present. When I see it in the ingredients of a recipe, I always want to cook it.
At the sight of a jar of condensed milk, I immediately remember how I loved it as a child. And who didn't love him? Take a jar of condensed milk from the pantry, pierce 2 holes on top, close in your room and slowly suck this sweet nectar from the jar, to the last drop ... While the parents are not at home ... And what will happen then - it doesn't matter ... The main thing is this sweet moment of pleasure ... Mmmmmm ....

And in this cake there are 2 goodies at once that I adore - condensed milk and coconut. Moreover, the sunny orange color, which is given by healthy carrots. And the joyful thought does not leave me when I eat this pie that it is not so high in calories thanks to carrots, and I can eat more of it!

The preparation is simple!

For those who like it sweeter, you can add a little sugar (a couple of spoons).
The original recipe for the coconut flakes was 100g, but it seems to me that the texture of the filling is more creamy with less. But if you wish, you can add a little more coconut.
