Poppy-curd pie

Ingredients

The foundation:
Wheat flour 1.5 - 2 tbsp.
Milk 4 tbsp. l.
Salt pinch
Sugar 2 tbsp. l.
Butter 2 tbsp. l.
Fresh yeast
(or 1 teaspoon dry)
15 g
Egg 1 PC.
Yolk 2 pcs.
Filling:
Fatty cottage cheese 1 kg
Poppy 500 g
Milk 250 ml
Sugar 3/4 Art.
Vanilla sugar 1 tbsp. l.
Yolk 2 pcs.
Zest of 1 orange
Sprinkling:
Wheat flour 1 tbsp.
Sugar 4 tbsp. l.
Butter cold 4 tbsp. l.
Yolk 1 PC.

Cooking method

  • First, we make a dough - half the sugar, milk and a little flour, mix, leave for an hour. Now add everything else and leave it for another 1.5 hours.
  • Rinse the poppy with warm water, scald with boiling water, immediately drain, scald again and leave in boiling water for no more than 1 minute. Then drain the water and cover the poppy with a bowl to steam. Do not take a poppy that has been lying for a long time. His butter goes rancid and you can feel it in the cake.

  • Boil milk with sugar, add vanilla sugar and yolks. Boil for a couple of minutes, stirring constantly (preferably with a whisk). Remove from heat, allow to cool, add poppy seeds and orange peel, stir.

  • For me - so much flour here. Do not put as much at once, put half and chop everything into crumbs with a knife. And you can do without sprinkling. Coat the top 10 minutes before the end of baking with sour cream and sugar, like a cheesecake.

  • Roll out the dough 5-7 mm thick, put in a mold (grease well with butter), trim the sides of the dough, lay out the filling, and evenly cover the top with sprinkling. After that, overnight in the refrigerator. Any curd loves to be eaten cold.

Bake in the oven at 180 degrees.
