Turkish tortillas with fillings (Pide)

Ingredients

Dough:
Wheat flour 500 g
Water 330 g
Salt 8 g
Sugar pinch
Ghee 25 g
Dry yeast 1 tsp
Filling:
Mozzarella cheese 250 g
Hard cheese
(grano padano, parmesan, emmental)
50 g

Cooking method

  • Knead the dough in lukewarm water. Let it rise twice (40-60 minutes).
  • Pour onto the table and divide into 5-6 pieces. Shape the pieces into balls and let them stand under a towel for about 30 minutes.
  • Roll each ball on a table dusty with flour into a long thin oval sheet about 3-4 mm thick. Put grated cheese (or any other filling you want) along the center of the cake in a thin layer. Don't be tempted to swell a lot. Will be overkill.
  • Bend the edges inward by 2 cm, press down with your fingertips. Pinch the ends to form a boat. The cakes are long and narrow - 30-40cm. Transfer to a baking sheet and bake for 7-10 minutes in a very preheated oven (240 degrees). Sometimes they are immediately greased from the oven with a brush of melted butter.

The Turks call them that. I ate a lot of these cakes. I watched how they were made. I concluded that they are almost the same everywhere.

The biggest feature of these cakes is that they are baked in a wood-burning oven on a very hot hearth, where there is an open fire right next to it. We have nowhere to take all this. Accounted for in an ordinary oven, although they certainly lose in aroma. These flatbreads are a cross between Adjarian khachapuri and pizza. Very simple and delicious. They are taken out of the oven, immediately cut with a crescent knife obliquely into portions and eaten. The most wonderful they are hot, then the fried dough loses its crispness. Because of this, they are best cooked right before dinner, to be served hot with the heat for the first course or salad. They can be with a wide variety of fillings (like pizza), but I love with feta cheese and herbs, as well as just with cheese, such as Emmental or Lambert. Mozzarella is great, but it needs to be supplemented with some more mature and pronounced cheese, or other additive. By itself, it is bland. But it roasts and melts great.

I diluted the water with milk into the dough and poured vegetable yeast 15g instead of melted butter. "Pizza" mode in HP Panasonic, divided into 6 parts and rolled out. Thinly rolled yeast dough swells and opens in the oven into 2 parts (top and bottom), remember pitas. So that it does not swell - they prick it. The wood-burning oven was heated to 300 degrees, it was necessary to turn the baking sheet several times to evenly blush. Brush immediately from the oven with melted butter. This is awesome delicious!
