Three-flour bread

Ingredients

Wheat flour 300g
Rye flour 100g
Whole grain flour 100g
Leaven 100g
Dry yeast 2 tsp
Salt 1 tsp
Sugar 1 tsp
Malt 1 tbsp. l.
Water 300 ml

Cooking method

  • Pour the flour into a bucket in the same order as in the recipe.

  • The sourdough always comes in the middle.
  • Add yeast to the bucket.
  • Pour warm water into a separate container, add malt, salt, sugar. Mix everything. It is not necessary to wait until the malt is infused.
  • Pour the whole mass into a bucket, put it on the avenue of kneading dough.
  • I kneaded on this program 2 times. because in time one kneading operation is 15 minutes. I got 30 minutes, then the main program for at least 3-45 hours. in kenwood program 3.
