I baked the cakes in three passes, pinched them in different ways, and the result is the same. Although this did not affect the taste and speed of eating. But maybe there is some secret?

Oh! Now I reread the recipe and realized that I did not prick the cakes with a fork. This is probably the reason.

Thank you! All according to the recipe. But my proteins with sugar did not want to whip to hard peaks. The consistency was much softer. Maybe that's why it is so.
