There are two stages - fermentation, and a type of water bath.

The first stage is slightly different from just a yogurt maker - 6 hours 38-40 degrees (on the yogurt program - 37-39, on the sour cream program - 36). After that, the temperature rises - half an hour 60 degrees and half an hour 70 degrees. That is, the last hour is a water bath (not fundamentally for half an hour at 60 and 70 degrees, in principle the temperature rises. For half an hour 60 and 70 - a gentle rise is simple).
