I have a question about clear broths. Can you tell me. I also cook broth like you, drain the first water. But the pediatrician told me that there is no need to drain for children, they should be cool and rich. What do you think? thank you in advance. Sorry, maybe not in the subject, I did not find it on the forum about broth.

Anael, I'm sorry, but the question is not about cooking, but about children's diet. Your doctor just went to a different school of study and probably from a different region than you. I once compared the advice of pediatricians in the USSR (80s), Czechoslovakia and France, and these differences were very visible. But everywhere children grow up. Rich broths were considered healthy for children in Russia until about the 60s. But with the increase in the number of children with allergies, the attitude has changed due to the large number of allergic components, especially in bone broths. The recommendation of the doctors of the Children's Allergy Department of the Children's hospital No.1 of St. Petersburg: cook broth for children only from the tenderloin and drain the first water.
